If you want a thickened glaze or sticky sauce to pour over your tofu after cooking, you can simply thicken your leftover marinade.
Add the diced tofu and let it marinate, covered in the fridge for at least 15 minutes. A generous amount (2 to 3 tablespoons or so) will keep the tofu from sticking to the pan. i believe the liquid means the marinade it was in not the… tofu water?

Ok, what does Step 2 mean, “Strain the tofu, but don’t discard the liquid.”. If you want to avoid soy sauce, it may be difficult to find another ingredient to use in its place.
You just need to marinate the tofu for 15 minutes, but if you’re in a hurry, you could even sautée the diced tofu (using some oil or not, you choose) and then add the sauce.
